Cranberry Apple Risotto


(yields 8 servings)

  • 1 cup short grain rice
  • 1/2 cup glutenous rice

        - OR -
  • 1 1/2 cup of arborio rice
  • 2 cups of cranberry ginger ale
  • 2 cups of apple juice
  • 1 cup of water
  • 1/4 cup cranberries
  • 1/4 cup raisins
  • 1 apple thinly sliced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 2 tablespoons butter
  • 1/4 cup brown sugar

  1. Combine ginger ale, apple juice and water and keep it handy.
  2. Heat skillet. Throw in butter and then rice. Liberally mix rice and butter to it coats and begins to brown. Add cinnamon.
  3. Add three cups of the liquid mixture 1 cup at a time. Stir rice and liquid until the liquid is absorbed before adding more liquid.
  4. Add remaining water to rice cooker. Pour in rice mixture. Add remaining ingredients, stir and allow to cook in the cooker.
  5. Serve topped with yogourt or maple syrup.
